Here we’re talking about quality of work which is authentic and things you strongly believe in. Some of those examples can be a leader of a sports team, swimming team or others. Member of community services which helps others in some share or form. Any kind of internship related to computers or any other technology which enhances your analytical and critical thinking skills. You must show the motivation and enthusiasm which has taken you one extra step in learning something new or unique.
Having extracurricular activities in your resume gives you a competitive advantage over your competitors during the admission process. If you know which area you would want to major then you are encouraged to pursue extracurricular in that area which will boost your fundamental knowledge in that area before even getting started.

Volunteering activities:
Volunteering is a very good extracurricular activity to gain valuable life experience and skills, show your commitment beyond regular academics, help your community. You can volunteer in the areas of arts, music, sports, cultural and community building events, museums and in many areas’ fronts. 

Student governing bodies and academic clubs:
You can apply for various roles and positions within student government bodies or academic chapters. You can demonstrate leadership and responsible roles where your peers look up to you and you become a role model.

Impromptu extempore speeches, group discussions and debates:
You are encouraged to participate in events like these where you can grow your communication, confident, and become more of an extrovert human. You can join a Toastmasters club if you have one nearby to develop your communication power.
Building networks and relationships and getting recommendation or reference letters:

Build strong relationships with your mentors, teachers, principals, instructors, such that they can stand behind you and give you professional recommendations which will help you get admission into good universities and colleges. Letters of recommendation are also important piece of catalyst for admission into good programs.

Internships/ Work experience:
 Show how to balance life, multitasking, ability to take ownership and responsibility etc without hampering academic studies etc.
 Ability to maintain a healthy balance in life throughout.

College admission committee pays attention to:
• How deeply you’re involved in what you’re doing is lot more important than how many different activities you’re involved with as far as extracurricular is involved
• How have you improved in your academics over the years? Meaning your grades/scores/marks should generally tend to improve over the years and should be in the top percentile
• Strength of one’s pre-college curriculum is also important. How strong and vast were your course curriculum? Are these relevant to what you’re going to pursue in your under-grad studies.
